though it's a year old:

Handy little program listed called iplog which, as the document says:
"...has an option (-z) that allows to fool Nmap queries, and, although
we can behave as other OS, we can completely fool Nmap when guessing
remotely our OS". That sounds kinda handy since you could avoid having
to load kernel modules or patch your source & recompile. Mind you I
haven't tried any of these.
Perhaps there is a live-CD linux distro already patched up with some of
the more hardcore stuff that you could try out... good live-CD list
