you can build a seperate kickstart config for every server, named [ip
address].kickstart; for that matter, you can make a generic config
(ks.cfg) and then create individual configs for just the servers you
want to be unique, if you have a "mostly generic" system (like, say, a
web server farm plus a few infrastructure boxes).

personally, i have my hosts set up with two interface, one back and one
front (ie, publicly ip'd and a private net), and i have the servers come
up with the back network up but not the front, so it gives me a chance
to tweak before the machine hits the net.

it's a two hour drive for me to physically touch the systems i manage,
so i've put a lot of effort into making sure i can rebuild them without
having to actually go there (it's actually pretty easy to get the
'bootnet.img' to work as a LILO-bootable config, and thus rebuild a host
from the command line...)

if you're really into doing configuration at the console, i think if you
just leave sections out of the kickstart config the installer will go
ahead and prompt you.
